Prune Squares

This is an old Elting family recipe and these are just the best!

Stuff you'll need....
1 1/2 cupsCut prunes
1/2 cupSugar
1/2 cupwater
1 tsp.Grated lemon rind
1/4 cupLemon juice
1/2 cupChopped nuts
1/2 cupButter
1/2 cupBrown sugar
1/4 tsp.Salt
1 cupFlour
3/4 cupOatmeal

What to do: combine in saucepan the prunes, white sugar, water, lemon rind and juice. Cook over medium heat stirring occasionally until thick, about 5 minutes. Stir in nuts and set aside.

Cream butter, add brown sugar and salt. Cream well, stir in flour and oats. Reserve cup for the top. Press remaining mixture into 9" square pan. Spread with filling. Sprinkle with the remaining mixture. Press down lightly. Back at 350o degrees F for 25-30 minutes.

You can substitute raisins for the prunes, in this case, add 1/4 cup of flour to filling.

Or dates: cook 1 1/4 cups (8oz package) cut dates, and use 3/4 cup water. Stir constantly until thick.
